The sourdough spelt chocolate chip (adapted from Edd Kimber) is my newest CC iteration. Made with Ronnybrook Farm organic butter, Brooklyn Granary&Mill organic all-purpose, bread, and spelt flour, Rexcroft Farm eggs, and Raaka chocolate.

This cookie has incredible texture and flavor depth due to the addition of the sourdough starter. It’s crispy on the edges, making way to a fudgy, chewy center. My standby Raaka 71% unroasted chocolate lends its distinctive fruity, bittersweet flavor, unmarred by soy or sunflower lecithin–bitter oil production by-products that tend to add an unpleasant aftertaste to most commercial chocolate. The spelt adds a wholesome nuttiness (boosted by the browned butter) to round things out. This is a chocolate chip cookie to be remembered!
