Gluten Free Miso BB Chocolate Chippers
Each baggie contains 6 standard sized cookies.
This cookie was originally on the glutinous roster, but by chance I decided to test a GF version. The result: an even better cookie! So meet her: a decadent choco chipper that just happens to be gluten free. Made in a multiple day process that goes:
Day 1: butter and buttermilk powder are browned, organic red miso paste is added once removed from the heat. This is allowed to meld and re-solidify overnight.
Day 2: Dough is mixed and then allowed to ‘cure’ in the fridge for at least 24 hrs, leading to a breakdown of starches and proteins, which concentrates flavor and leads to superbly caramelized cookies with a lovely chew.
Day 3: Dough is portioned, bagged, and stored, ready to be baked off fresh for your orders!
Made with a combination of Bob’s Red Mill gluten-free baking flour&teff flour, Raaka organic 71% unroasted chocolate, and Ronnybrook Dairy butter.
