RED VELVET CUSTARD

A pantry Valentine’s classic returns for another round! A lovely soft, deep red dough is enhanced by browned butter and a bold amount of Cacao Barry Extra Brute cocoa powder. Most red velvet recipes don’t use enough cocoa powder, and, finding it a defining flavor element, I’ve made sure it didn’t get lost in the mix. Further flavor&acidity boost comes from buttermilk powder

Most importantly, this cookie is stuffed with the good-good: a thick cream cheese custard that avoids the cloying, overly sweet and gritty powdered sugar conundrum that tops most classic red velvet cakes. Rife with vanilla beans, rich and silky with milk and eggs, light and fluffy with whipped butter and cream cheese, it is undeniably delicious.

RED WINE BROWNIE WITH CHERRY GANACHE

A symposium of all the things I look for in a delectable cookie: fattiness, acidity, and sweetness, with each balancing and lending itself to the others. The cookie dough gets its wonderfully fudgey texture in part from a red wine reduction, which also adds the faintest tinge of red to the dough and a funky complexity that is hard to place without knowing what’s behind the curtain. The Cacao Barry brute cocoa powder, rich but mellow in combination with browned butter and brown sugar, is a perfect canvas for chunks of punchy Raaka 71% unroasted chocolate pastilles to burst through.

Then, there is the luscious, creamy cherry ganache filling. Tart from cherries, lemon, and yoghurt, rich with cream and the very special non-deordorized icoa white chocolate from El Rey, this beautiful complex filling blends wonderfully with all the elements of the cookie, enhancing the fruity fudge to perfection.
