STRAWBERRY MAPLE CHOCOLATE HEARTS

Often, I look to my suppliers for flavor inspiration, both to get my thinking outside my own flavor wheelhouse and to highlight a product I think is stellar. Flavor powers combined! This particular combo of strawberry, maple and dark chocolate has been in my head since trying Raaka's pure cacao&strawberry&coconut bar last spring, as well as their maple-sweetened chocolate. I already knew that the particular fruitiness of Raaka's unroasted Ungandan chocolate paired incredibly well with freeze-dried strawberries, and wanting to bring a little woodsy element in, I decided to use their maple-sweetened bittersweet chocolate plus some maple sugar to round things out. The result is a buttery, wonderfully fruity, bittersweet, tangy delight that honors all these precious ingredients as well as the 'Valentine's tradition' of fruit and chocoalte. The hearts are finished with a naturally colored strawberry maple icing.

BUCKWHEAT CHOCOLATE HEARTS

One of my very favorite sablé-style cookies, this one gets a beautiful, crumbly texture and flavor from Brooklyn Granary&Mill's Kyoto buckwheat flour. To add to the textural dream, pops of kasha (toasted buckwheat groats) are dotted throughout, as well as bits of Raaka 71% unroasted chocolate. It's rich, it's hearty, it's not too sweet. Decorated with a buckwheat honey&chocolate royal icing.
