Here I am yet again, questing towards the next greatest chocolate chip cookie. This round swam into my mind through a series of “I wanted to do that some time-ago”s–my desire to make a coffee-themed CC, my curiosity for using barley malt syrup in a cookie, testing out a new brand and percentage of chocolate, how much malt is too much malt, and so on. The answer is never enough malt (or barley), and therefore we crest the flavor wave on a raft of homemade malted milk powder stuck together with malted barley syrup and buoyed with a mix of Ground Up Grains AP flour and barley flour. The coffee hits you somewhere between the back and the middle of the wave–either more boldy with a chunk of coffee infused chocolate (mixed in between the Raaka 70% unroasted chocolate)–or more mildly through the ground coffee flavoring the dough. All in all, it’s a turbo-charged riff on my no. one cookie.
