Blueberry corn honeycomb
When I taste tested this cookie, I cried. I couldn't believe the magic that good ingredients, good food science, and good technique combined to create.
This buttery cookie uses wapsie valley corn flour from Brooklyn Granary&Mill and Joly Bee Honey, sourced from hives in northern Connecticut. Most excitingly, it swaps in blitzed honeycomb for cane sugar, giving the whole cookie an extra honeyed, caramelly boost and lending delightful little crackles of texture throughout. Dried blueberries add a chewy, mildly fruity&tangy note, and a hint of buttermilk gives the whole thing a cornbread lean. This cookie is undeniably delicious, and one of my proudest moments of recipe development.
Apricot infused olive oil CCs
This cookie is inspired by Raaka chocolate's early summer specialty bar, apricot olive oil, and is also an homage to my home region, the Central Valley of California. There, the climate bears many similarities to central and southern Italy, which accounts for the similarities in edible landscape. Both apricots and olives are common crops, and also pair beautifully together, with the floral fruity tang of the apricot nestling into the grassy, bitter notes of good extra virgin olive oil.
This cookie comes in looking like a perfectly normal chocolate chip cookie, but takes you to different and delightful flavor and texture territories. Extra virgin olive oil infused with dried apricots adds a distinct grassy flavor, almost mineral and savory, with a bass tang of apricot ringing in the background. Texturally, it is crisper than a classic CC, especially at the edges, but gives way on the tongue easily due to olive oil's very low melting point. A blend of Brooklyn Granary&Mill whole grain spelt and Expedition bread flour keep the cookie pleasantly chewy. Dotted with chunks of the aforementioned apricot olive oil chocolate bar, which cuts through with a fruity, creamy zing. A wonderful, nuanced cookie surprise!
Strawberry malted milk CCs
Think of her as the strawberry Nesquick from the 90's that grew up to become a Flavor Queen–fruity, salty, sharp, malty. A good deal of freeze dried strawberry powder brings undeniable fruit, adding pleasant chew and pairing to perfection with Raaka unroasted 71% chocolate. The addition of homemade malted milk powder gives you the nutty touch, mellowing some of the zing while somehow managing to compliment it. Fancy, but also imbued with nostalgia. That's my kinda cookie.
