A mysterious little cookie made to sing the praises of Chocolates El Rey icoa white chocolate–a non-deodorized white chocolate that maintains the delicate notes and the funk of the cocoa butter. Incredibly creamy, not at all flat or basic (or tasting of a booger, which is how I perceive the majority of white chocolate). The pops of toasted black sesame seeds, with their slight bitterness and rich earthiness are an excellent contrast to the smooth, mild icoa chocolate. Then, there is the low-flying acidity from the freeze-dried mango powder–not instantly recognizable, but certainly there, offering a zippy contrast to the smooth chocolate. To enhance texture and flavor, a small percentage of butter has been subbed out for melted cocoa butter and toasted tahini. All of the above leads to an exciting cookie that becomes more than the sum of its parts.
