After swooping up 12 pounds of sweetheart cherries from the Davis Farmer's Market, I had a long brainstorm about flavor possibilities. The first combination that came to mind was cherries&amaro, but when I went to the local food co-op to suss out liquors, the amaro section was slim pickins. While I couldn't find my tried and true labels, I did come across Lo-Fi spirits sweet vermouth, bottled in Napa, CA. This vermouth has a unique blend of botanicals, including automatic cherry compliments such as cocoa, cherry bark, cardamom, clove, orange and vanilla–but also a wild card, coconut. The coconut gives it a rather unique floral quality, one that adds exciting undertones to the cherries without becoming overbearing. I love the elusive quality of this one–she's giving subtle but complex. Could do wonders with a more aged soft cheese, certainly Delice de Bourgogne, but imagine it swimming in brownie batter, or on top of a fluffy pancake?!
