Apricot Cherry Chutney
I tend to go for chutneys that sit outside the typical 'Americanized' version, and this one does so by becoming a chutney/conserve hybrid. It's standard chutney faire in that it uses fruit, vinegar, and onion to anchor it as acidic, savory, and sweet. But it goes off the rails with the addition of dried tart montmorency cherries and some toasted almond slices that are added in just before canning, making it akin to a conserve (which is typically a mixture of fresh&dried fruit with nuts). This chutney contains multitudes! And it is beautifully textural, thick, even a touch spicy due to yellow curry powder. It makes a wonderful counterpart to aged, sharp cheeses, and would also be at home slicked across a cut of meat, fish, or a simple bowl of rice.
