After a stint making cookies to pair with digestifs at a wonderful Italian restaurant in Bushwick, I came to truly appreciate the many and varied aperitifs and digestifs of Italy. Campari is a classic aperitif, with its brilliant red-orange hue and bitter herbal notes that cut through the sweetness in the most refreshing way. Here, that bitter finishing note is a wonderful counterpart to the floral, sweet, and mildly tangy apricot. Imagine eating this on a thin slice of toasted sourdough while sipping a negroni and watching the sunset–heaven!
