I delighted in getting two hauls of beautiful, ruby red cherries from one of my favorite stone fruit sellers at the farmer's market this year. The first round went to cherry mezcal lime jam, the second to this fitting combination of fruits and flavors. Because both cherry and apricot pits contain the same chemical compounds as bitter almonds (used to make almond extract), they pair marvelously with amaretto, which is made by infusing the tiny almond-like nuts inside apricots in liquor and sugar. This sweet, almond scented delight would be an absolute treat spread on any sweetbread, paired with marzipan, or perhaps even as a filling for the famous Italian amaretti cookies.
