These thick, supremely crispy-crunchy crackers are the perfect vehicle for your new Poppet’s Pantry provisions! The backbone here is my rye sourdough starter, made with freshly ground whole grain danko rye flour from Brooklyn Granary&Mill. It has a wonderfully complex, fruity&nutty profile. This is mixed with whole grain spelt (also from Brooklyn Granary&Mill) and a little all-purpose flour from Ground up grains. Then, I pack the dough with an army of flavor, texture, and nutrient dense add-ins: black&white sesame seed, flax seed, caraway seed, cumin seed, sunflower seed, chia seed, a mild herbal note from dried thyme, and an umami kick from a little dried garlic. A little Japanese sweet sake rounds out the fruity-funky sourdough note. Finished with Maldon sea salt. Extremely addictive on their own, next level with sweet&savory jams and fruit butters.
