MANGO COOCNUT MELTING MARBLES

• A tropical swirl of tender, melt in the mouth mango shortbread and coconut shortbread, using organic freeze-dried mango powder and organic coconut milk powder, flour, and flakes for flavor boosting without adding undue moisture (leading to a tough dough). Dotted with petals from dried rose and calamanthus flowers. As lovely to eat as they are to look at!

STRAWBERRY SUMAC SHORTS

• Sumac, a tangy berry used as a spice in many dishes around the levant, makes a great pair with strawberries, boosting their mild acidic notes and complimenting the floral undertones. Additionally, each add a beautiful reddish-pink hue to the cookies without any undue food coloring. Cookies are finished with a strawberry sumac glaze that includes a glug of the limited edition strawberry amaro from Greenport's Matchbook Distillery.

CORN HONEY SQUARES

• If corn bread were a sablé. Instead of cane sugar, I’ve blitzed homemade honeycomb into a rough powder, resulting in pops of caramelized honey throughout the not-too-sweet dough. This makes a winning combination with Brooklyn Granary&Mill’s Wapsie Valley corn flour. The square is finished with a buttermilk honey royal icing, painted with natural dyes to look like a folded picnic blanket.

LANDRACE RYE&NIBS HEAPS

• Rye and chocolate are a natural flavor pairing, and here nutty, hearty landrace rye from Brooklyn Granary&Mill pairs swimmingly with organic cacao nibs–the roasted&fermented seeds of the cacao fruit from which chocolate is made. Nibs add a delightful crunchy texture and a more pronounced fruity, slightly bitter flavor than chocolate. Toasted hazelnuts further compliment both rye and nibs, making this morsel incredibly moreish.
