Conserves are a lesser known, more complex type of preserve that includes the addition of dried fruit and toasted nuts. In this case, organic damson plums from my family’s sweet little tree are macerated with plump, dried medjool dates and whole cinnamon sticks overnight, The next day, they are cooked slowly on low heat for a few hours. Shortly before canning, the toasted and roughly chopped pistachios are added in, preserving their crunchy texture and nutty flavor, a lovely counterpart to the sweet-sour plums and sweet, chewy dates.

A festive fall&winter preserve that pairs well with soft, funky cheeses.
